Sullivans Cove is a small-batch distillery out of Hobart, Tasmania. It focuses on hand-crafted spirits and excels in distilling the gold standard of world whisky.

All of Sullivans Cove whiskies begin with pure Tasmanian water and 100% Tasmanian malted barley.

They are then distilled in a Tasmanian built still named Myrtle and aged in either former American bourbon barrels or French ex-tawny oak barrels.

The aging process is unique to the climate of Tasmania. After a few years, regular tasting of the whiskies begins so that the distillers know when to stop aging and begin bottling. In the end, each barrel is aged between nine and eighteen years.

Finally, each barrel is hand-bottled when the taste is perfect. Each batch produces only a few hundred bottles.

Each bottle has a white sticker noting exactly what that particular bottle contains. For this reason, every bottle of Sullivans Cove whisky is beautifully unique. In 2014, Sullivans Cove French Oak was named World’s Best Single Malt at the World Whiskies Awards, and is still the only Australian whisky ever to win in this category.  In 2019, Sullivans Cove French Oak Single Cask was awarded World’s Best Single Cask Single Malt at the World Whiskies Awards. This followed winning the same award for their American Oak Single Cask in 2018, making Sullivans Cove the only distillery in the world to ever win the award twice.  The former Head Distiller of Sullivans Cove, Patrick Maguire, was inducted into the global Icons of Whisky Hall of Fame in 2018. He is the third Australian to ever receive this honor, which places Maguire in a small group of the world’s most influential whisky personalities.

The American Oak Single Cask is Sullivans Cove’s most awarded whisky and is the most
awarded Australian whisky ever.

Aged for 10 years in a single 200L former bourbon cask made of American oak, this whisky
represents the defining style of Sullivan’s Cove. As a single cask bottling, every tiny batch is
different, expressing the unique characteristics of each barrel.

This single malt whisky is aged in a combination of French and American oak casks, every tiny
batch expressing the unique characteristics of both styles. It is always non-chill filtered and
additive free.

Comprised of two French Oak ex-tawny (12 and 18 years old) and two American oak ex-
bourbon (11 and 12 years old) casks, this batch is a classic example of the Sullivans Cove style.
Bottled at 45% abv, this whisky has all the creamy texture, warm fruits and sweet malty notes
Sullivans Cove is known for, resulting in a rich and complex but very friendly and approachable
single malt.

Tasting Notes:

Incredible complexity and length. Double Cask has a rich palate of sweet malt, dried apricots,
vanilla, cloves, ripe banana, honey and freshly baked bread.

Sullivans Cove Old & Rare bottlings are reserved for the very few casks which are allowed to
age for at least sixteen years.

 

The Sullivans Cove philosophy is to bottle whiskies when they think they are at their peak of
flavor and character, regardless of age. The vast majority of Sullivans Cove whiskies hit their
peak at around ten to twelve years, but every once in a while, the distillers identify a cask with
the specific characteristics that allow for extended maturation. The result is the oldest and rarest
of Australian whiskies – something only possible at Sullivans Cove as the only distillery in
Australia that has been using full-sized casks since the mid-1990s.

Each bottle is presented in a unique, hand-made, solid wood presentation box and includes a
letter of authenticity hand-signed by Head Distiller, Heather Tillott.

Tasting Notes:

All of the Old & Rare whiskies have incredible length and breadth of palate; rich, oaky and
hugely textural while still retaining the unmistakable brightness and character of Sullivans
Cove’s unique spirit.
