Sullivans Cove is a small-batch distillery out of Hobart, Tasmania. It focuses on hand-crafted spirits and excels in distilling the gold standard of world whisky.
All of Sullivans Cove whiskies begin with pure Tasmanian water and 100% Tasmanian malted barley.
They are then distilled in a Tasmanian built still named Myrtle and aged in either former American bourbon barrels or French ex-tawny oak barrels.
The aging process is unique to the climate of Tasmania. After a few years, regular tasting of the whiskies begins so that the distillers know when to stop aging and begin bottling. In the end, each barrel is aged between nine and eighteen years.
Finally, each barrel is hand-bottled when the taste is perfect. Each batch produces only a few hundred bottles.
Each bottle has a white sticker noting exactly what that particular bottle contains. For this reason, every bottle of Sullivans Cove whisky is beautifully unique. In 2014, Sullivans Cove French Oak was named World’s Best Single Malt at the World Whiskies Awards, and is still the only Australian whisky ever to win in this category. In 2019, Sullivans Cove French Oak Single Cask was awarded World’s Best Single Cask Single Malt at the World Whiskies Awards. This followed winning the same award for their American Oak Single Cask in 2018, making Sullivans Cove the only distillery in the world to ever win the award twice. The former Head Distiller of Sullivans Cove, Patrick Maguire, was inducted into the global Icons of Whisky Hall of Fame in 2018. He is the third Australian to ever receive this honor, which places Maguire in a small group of the world’s most influential whisky personalities.
